
Pinot Grigio 'Bottega Vinai' Cavit 2025
De Pinot Grigio Bottega Vinai van Cavit is een wijn die elegantie en delicatesse uitdrukt. De geselecteerde druiven worden zachtjes geperst en gevinifieerd in stalen tanks. Het glas kleedt zich in een strogele kleur met groenachtige reflecties en verbergt een aromatisch bouquet van bloemige noten en aroma's van rijp fruit zoals peer, perzik en meloen.
“Bottega Vinai” is the line of creations reserved for wine shops and restaurants, which Cavit dedicates to the most suitable areas of the Trentino region. The range is strictly composed only of labels with Denominazione di Origine Controllata. The grapes for the production of this Pinot Grigio come from two distinct areas located in the northern parts of Lake Garda: the territory called Roverè della Luna and the historic Valle dei Laghi. The Trentino hills are one of the chosen areas for this grape variety: originally from France, it has spread mainly in the northeast of Italy, with a preference for Friuli Venezia Giulia. The white winemaking allows it to express all its elegant delicacy.
In the Cavit winery in Ravina di Trento, the Pinot Grigio “Bottega Vinai” is vinified in steel containers, in order to preserve the aromatic integrity of the grape and highlight its more delicate nuances. The soils are of alluvial and fluvioglacial origin, with significant deposits of gray marls and the vines are cultivated with the typical Trentino pergola system. The selection of the bunches begins already at the time of harvest and continues with their arrival at the production site: the harvest must never take place too late in order to safeguard the important gift of freshness of the berries. The whole bunches are pressed only lightly, so as not to extract the pinkish hue of the skins, and fermentation takes place slowly and at controlled temperature. The subsequent aging on fine lees continues for a period of 4 months, concluding at the moment of cold bottling.
The Pinot Grigio “Bottega Vinai” presents itself dressed in delicate and precise straw yellow tones and shows a clear appearance. The nose is characterized by a gentle delicacy, very focused on floral notes that, over time, can evolve into a bouquet of ripe fruit. There are also very prominent vegetal hints of spring leaves and a fresh herbaceous note. A white wine that pairs sincerely with non-spicy fish soups, seafood risottos, or even cold white meats.
