the plots are located within the Montagne de Reims area, particularly in the municipalities of Coulommes-la-Montagne, Pargny-lès-Reims, Saint-Euphrasie, and Gueux, where they benefit from the characteristic oceanic and continental climate that distinguishes the region, as well as the clayey and sandy matrix of the soils. The agronomic management is based on sustainable practices and agroecology, a discipline based on techniques such as cover cropping, planting trees, and limiting soil tillage. The grapes are hand-picked and immediately pressed before the alcoholic fermentation of the must, with the sparkling bases expertly blended in search of the most balanced cuvée, which then undergoes secondary fermentation in the bottle according to the prestigious Metodo Champenoise.
