The agronomic management is based on sustainable practices and agroecology, a discipline based on techniques such as cover cropping, planting trees, and limiting soil tillage. The grapes are hand-picked and immediately pressed before the alcoholic fermentation of the must, with the sparkling bases expertly blended in search of the most balanced cuvée, which then undergoes secondary fermentation in the bottle according to the prestigious Metodo Champenoise.
