The harvest is carried out entirely by hand, and in the cellar, fermentations occur spontaneously thanks to the sole intervention of indigenous yeasts, often at low temperatures. As wine containers, Etienne uses stainless steel tanks, and for the sparkling process, the winemaker resorts to the Classic Method and the Ancestral Method, depending on the label in question.
