Achille is the name of one of the most well-known and representative red wines from the Bindi Sergardi winery, an important Tuscan production reality with an ancient and noble history, founded in 1349 and today led by the 23rd generation of the family. It is a typical expression of Tuscan Sangiovese, produced with vinification in steel and short aging in barrique. It is dedicated to the historical figure of Achille Bindi Sergardi, an illustrious ancestor of the current owners and Master of the Salt Customs at the end of the 15th century.
The Sangiovese grapes that give rise to the Achille of Bindi Sergardi come from the Montagnola Senese, a hilly area of rare beauty, rich in woods and consisting of predominantly calcareous soil, with rocky subsoil rich in skeleton. In the winery, fermentation takes place on the skins in stainless steel containers at a controlled temperature of 28°C and lasts about 15 days. After malolactic fermentation, a short maturation in oak barrique follows, which can last for a few months.
The Achille Bini Sergardi combines the two souls of Tuscan Sangiovese: the fresher, juicier, and fruitier soul alongside the richer, more evolved, and intense one. However, the former prevails, despite the use of barrique, here expressed in terms of expressive immediacy. The aromas primarily recall red fruits, including blackberries and cherries, although more complex nuances of spices, underbrush, and vanilla are not lacking. On the palate, it reveals dynamism and energy, presenting itself as a harmonious synthesis between freshness and softness, fruit and spice aromas, a sensation of roundness, and tannic texture. It pairs well with various land dishes, including first courses and red meats, offering an unmistakably Tuscan and typically Senese tasting experience.
