Baron Di Pauli
Strong with three centuries of winemaking tradition, the Alto Adige winery Baron Di Pauli is a protagonist of refined and territorial wines. The winery, founded in the 18th century in Caldaro along the Wine Road by the Austro-Hungarian commerce minister Anton Baron Di Pauli, was an official supplier to the court of the Austro-Hungarian Empire, with its wines served even on the tables of the Tsars of Russia. For 25 years, the family also owned the entire Lake of Caldaro, which was ceded to the same municipality in 1901. Since 1999, the estate has collaborated with the cooperative winery Kellerei Kaltern, with which it has initiated a project aimed at producing high-quality wines, and it is still managed by the Di Pauli family today.
The 15 hectares of vineyards that the Baron Di Pauli winery has are distributed over two estates: 10.5 in the Arzenhof property in Caldaro, whose vineyards are located between 250 and 390 meters above sea level on morainic soils, and the remaining 4.5 in the Hӧfl Unterm Stein estate in Sӧll, near Termeno, where the altitude exceeds 500 meters above sea level and the soils are made up of clay and calcareous gravel. In these heterogeneous contexts in terms of microclimatic and pedological characteristics, the Baron Di Pauli family cultivates white grape varieties Riesling Renano, Sauvignon Blanc, and Gewürztraminer, the latter technically classified as gray grape, alongside the black grape varieties Schiava, Lagrein, Merlot, and Cabernet Sauvignon. The yields per hectare are kept very low while the harvest is carried out by hand, exclusively when the grapes have reached full ripeness. In the winery, short pre-fermentation macerations are first carried out for the white grapes, followed by fermentations mostly in stainless steel tanks. Subsequently, the wines always mature in steel or in barrique, tonneau, or large oak barrels.
The selection of the Baron Di Pauli winery is characterized by the highest quality level of the wines, whether they are fresh and fragrant whites or full-bodied and fruity reds. Each type fully reflects the characteristics of their respective territories of origin.
