The Domaine Isabelle et Denis Pommier was founded in 1990 near Poinchy, within the territory of the famous Chablis appellation. Isabelle and Denis started their activity with the two hectares inherited from the family, which over the years have been enriched with other parcels, reaching about 16 hectares today. It is a winery with an artisanal character that produces wines capable of transparently interpreting the nuances of Chablis and directly and immediately conveying the typical savory characteristics and clear mineral freshness, which have made the Chardonnay of the Appellation famous worldwide, becoming true models for anyone wishing to produce elegant and refined whites.

The Chablis area is characterized by very particular, almost extreme pedoclimatic conditions for vine cultivation. It is the northernmost vineyard in the Burgundy region. It extends in a magnificent hilly area on slopes, divided by the presence of the Serein river. The climate is continental, with strong temperature excursions between day and night temperatures. The soils are predominantly composed of Kimmeridgian limestone, rich in fossils of small oysters, with the presence of calcareous clay marl. White soils, of ancient marine origin, very suited for the cultivation of Chardonnay, which is the only grape variety authorized by the regulations for the production of Chablis wines. The estate has vineyards in the Petit Chablis, Chablis Village, and the prestigious Premier Crus of Fourchaume, Côte de Léchet, and Beauroy appellations.

The agronomic conduct has always been carried out in a very environmentally respectful manner. First with a rigorous application of integrated pest management principles and since 2008 with organic certification. A choice not easy in a territory where the climate, with frosts, hail, and rains, risks compromising the quality of the harvest every year. Despite the great commitment that organic farming requires in the vineyard, Isabelle and Denis are convinced that their wines have substantially improved since all chemical products were banned. They have become more expressive, direct as well as more healthy and genuine. As true pioneers of Organic in Chablis, in just a few years they have set a standard and today there are many estates, even large ones, that are following their example.
